(Learning) Turkey Avocado Sandwich

Christmas 2014  celebration has come and gone but some of those tasty dishes are still left over in the fridge, like the turkey for example .  Didn’t they say that the left overs are always the tastiest especially the day after all the noise and celebration.  I have never understood the psychology of being full with the smell of the food particularly if you cooked it or is it that we taste so much during the cooking that we are full by the time everyone settles to eat. But really I do loose some appetite when I do large cooking and have learnt to keep some of my cooking so I can do justice to it when all is quiet. You know that moment when you warm the Jollof rice and chicken or turkey, fry some Dodo on top of the rice place your feet on a comfortable stool and dig in with your cutlery and hands.

In addition to the rice I left a sizeable portion of the turkey and so boxing day breakfast featured ….Turkey Avocado Sandwich. But again you can always use leftover roast Chicken for this sandwich and you will still enjoy . This is also a good office lunch idea.

Recipe
Ingredients
1 cup Strips of roasted Turkey breast
3 slices of Whole Wheat Bread
2teaspoons Mayonnaise
1/2 teaspoon Tomato Ketchup
Slices of Avocado pear
Strips of yellow and red Bell Peppers
1/2 teaspoon Black Pepper
2 table spoons boiled Brown Beans
 Method
1, Mix Mayonnaise with tomato ketchup and the black pepper
2, Mix the strips of turkey with the mayonnaise mixture
3, Pile turkey strips on to the bread, add the avocado, beans  and pepper strips.
4, Sprinkle some more black pepper on top of bread .
5, Enjoy with some freshly squeezed orange juice.
